i might get an apprenticeshipppp!!!!!

things that just dawned on me today:

do apprentices get paid?

are pastry chefs allowed to have anything but short nails?

Apprentices do not get paid. Usually. Did they ever, at any time, refer to you as an estage? Its basically the same thing and they don't get paid. Just abused.

I'm a pastry cook. I have sort of longish nails... but its really not reccommended. The only reason they're even sort of long is because I forget to cut them. When you're rolling out things like pie and tart shells... and need to press them into the corners, the nails will poke holes in the shell. Also, with all the flour and eggs you work with, you really don't want them. They're a breeding ground for bacteria. So just make sure they're short.
so far ive only been referred to a guy that often takes on apprentices. i called him today and he was too busy so ill actually get to talk to him tomorrow and find out more. but id always thought that apprentices get paid... i dont think we can live without me having a job. sucks. maybe i can do both...... it could happen!
Um... I'm sure in some cases, apprentices get paid. But most often, no. Not in the restaurant industry. They like when you'll work for free. Is this place/chef some big deal? Because if not, I'd just go for a job. I've never apprenticed. And I'm a pastry cook at one of the hottest restaurants in the los angeles area. Not to brag or anything :P I'm just saying so because apprenticing isnt really necessary unless you're trying to work at a certain place or with a certain person... or if you want extra attention. It depends on the chef.
When I did my apprenticeship I was paid. BUT there were stipulations in my apprenticeship waged by my school. The chef had to have chef certification and the apprentice had to be paid minimum wage and work a 40 hour work week.

This was quite a number of years ago, but I do remember the person gaining the most knowledge in the workplace was doing an apprenticeship at a French restaurant that made puff pastry from scratch. The person making the most, but learning the least... imho, was working at a hospital and making over $11 an hour.

at one place, i was paid for my apprenticeship. at another, i worked without pay in order to gain experience (i worked at both places while i was going to school).

before you take this on, you should go to a busy local restaurant (try lidia's for example, just tell them you want to shadow the pastry chef for a day-her name is andrea and she's awesome) and see how much work pastry really is. i think a lot of people don't realize how hard it is on your body. just ask to work with them for one day and check it out. make sure you are really ready to take that sort of job on.

i hope you don't talk this advice the wrong way... we've just had a lot of students not be able to handle the hustle of a busy restaurant. they've always left us in a jam in the end..

i agree with flarn_chef, the more you get paid, the less i think you learn. most hotels pay more but you don't get the quality of a restaurant that makes all their pastries from scratch. know what i mean?

Ditto!! AND the schools, generally speaking, have gotten money hungry... crankin' baby chefs out that don't have a clue about the pace in a busy restaurant or even the 'atmosphere' in a kitchen on a Saturday night.

i agree with you.. the schools here are now charging like $30,000-70,000! i was lucky and had one of the best schools in the country in my area. when i first entered the program (three year apprenticeship + 3 yr full time school schedule), they told me that i was giving up holidays, weekends, nights, etc. i had no social life for so long.. but it's worth it to me. most people in culinary school are really young and at that age, i don't think they are ready to give all the nights and weekends up quite yet..
